Grilled red snapper with green sauce

Grilled red snapper with green sauce

Ingredients

  • 1 large whole red snapper, cleaned
  • 1 lime, cut into wedges
  • large handful mixed fresh herbs, (basil, coriander, flatleaf parsley), finely chopped
  • drizzle olive oil
  • pinch sea salt

For the green sauce

  • 1 lime, juice only
  • large handful mixed fresh herbs, (basil, coriander, flatleaf parsley), finely chopped
  • drizzle olive oil
  • pinch sea salt
  • 1 tsp capers, drained (optional)
  • 1 cloves garlic, crushed (optional)

To serve

  • steamed green beans
  • hazelnuts, crushed

Method

1. For the snapper: preheat the grill to high. Tuck the lime wedges and herbs into the cavity of the fish then drizzle a little olive oil over the skin and sprinkle with a pinch of sea salt.

2. Cook the fish under the hot grill for 10-15 minutes or until just cooked through.

3. For the green sauce: while the fish is cooking, mix about half the lime juice with the chopped herbs, olive oil and a small pinch of sea salt. Stir in the capers and garlic, if using, then taste the sauce, adding a little more lime juice, olive oil or salt, to taste.

4. To serve, scatter the crushed hazelnuts over the green beans and serve alongside the fish and green sauce.
