Guacamole

Alan Coxon rustles up a real treat with his take on the traditional easy-make Mexican avocado dip known as guacamole

Ingredients

  • 1 ripe avocado, peeled, stoned and roughly chopped
  • 2 ripe tomatoes, peeled, seeds removed and roughly chopped
  • 75 g spring onions, roughly chopped
  • 1 clove garlic, chopped
  • 1 fresh jalapeƱo chilli, seeds and stem removed
  • 25 g coriander
  • 125 ml lemon juice
  • 50 ml extra virgin olive oil
  • fine sea salt and freshly ground black pepper

Method

Place all the ingredients except the seasoning into a food processor, season to taste and blitz until smooth. Serve in a chilled bowl.
