Hazelnut and orange roasted sweet potato

  • 2 cloves garlic, crushed
  • 1 orange juice, and grated zest
  • 50 ml clear honey
  • 3 sprigs oregano
  • 75 ml hazelnut oil
  • 4 sweet potatoes, peeled and cut into chunks
  • 50 g hazelnuts


1. Set the oven to 200°C/gas 6. 2. Place the garlic, orange juice and zest, honey and oregano leaves in a bowl and whisk to combine. 3. Add the hazelnut oil and whisk once more. 4. Add the sweet potatoes and hazelnuts and toss to coat thoroughly. Leave to absorb the flavours for 20 minutes. 5. Place into a roasting tin, pouring over any remaining marinade to coat. Bake for 30 minutes, basting half way through. Serve hot or cold.
