Healthy cottage pie

This healthy take on a classic recipe brings home comfort cooking without the extra calories

  • 450 g minced turkey
  • 1 onions, finely chopped
  • 2 sticks celery
  • 2 carrots, finely chopped
  • 1 clove garlic, crushed
  • 7 tbsp red wine
  • 400 ml chicken stock
  • 12 sun-blushed tomatoes, finely chopped
  • 1 handfuls tarragon, finely chopped
  • 100 ml extra virgin olive oil
  • 450 g potatoes, cooked and mashed
  • 2 tbsp parsley, chopped


1. Brown the turkey in a non-stick frying pan, over a medium heat, for 5 minutes, stirring occasionally. Remove from the pan.2. Fry the onion, celery, carrot and garlic in the frying pan for 6 8 minutes. Add the red wine and reduce by two thirds. Return the turkey to the pan, add the stock, tomatoes and tarragon and cook for 25 minutes. Divide among 6 individual heatproof pudding bowls.3. Preheat the grill to high. To make the topping, heat the olive oil in a medium saucepan and add the warm mashed potato, beat well, season and add the parsley.4. Add a layer of topping to each bowl of meat and brown under the grill for 2 3 minutes. Serve immediately.
