Herb and mustard pork burger

Mike Robinson adds mustard, honey and herbs to pork burgers to create a simple but tasty dish

  • 200 g minced pork
  • 1 tbsp grain mustard
  • 1 tbsp clear honey
  • 1 tbsp sage, chopped
  • 1 tbsp flat leaf parsley, chopped
  • 1 egg yolk
  • 2 tbsp breadcrumbs
  • grated1 lemons, grated zest only
  • 2 shallots, finely chopped
  • olive oil, for shallow-frying
  • freshly griddled sourdough bread

To serve:

  • sliced red onions
  • gherkins, sliced
  • capers
  • shaved parmesan
  • olive oil, for drizzling
  • rocket
  • sprigs watercress
  • your choice of relishes


1. In a mixing bowl, mix together the pork, mustard, honey, sage, parsley, yolk, breadcrumbs, lemon zest and shallots.2. Shape the pork mixture into 4 even-sized patties.3. Heat the olive oil in a frying pan. Add in the patties and fry until golden brown on both sides and cooked through.4. Serve the freshly fried patties between freshly griddled sourdough bread. Top the patties with red onion, gherkins, capers, Parmesan, a drizzle of olive oil, rocket and watercress.5. Serve with a relish of your choice.
