Herring in Oatmeal

  • 4 herring fillets
  • 4 tbsp flour
  • 2 eggs, beaten
  • 50 ml milk
  • 200 g pinhead oatmeal
  • 50 g fine oatmeal
  • 25 g unsalted butter
  • 150 ml vegetable oil

To serve

  • sprigs parsley
  • lemon wedges

Tips and Suggestions

Alan Pearson recommends that no salt or pepper should be used when cooking fish.


1. Dip the herring into the flour and coat both sides.

2. Beat the eggs with the milk

3. Mix together both types of oatmeal on a large flat plate

4. Dip the herring into the egg and milk mixture, then dip into the oatmeal mixture to coat.

5. Heat the butter and oil in a frying pan until the butter starts to brown.

6. Put the herring into the pan skin side first.

7. Cook for a couple of minutes on each side.

8. Serve flesh side up garnished with parsley and lemon.
