Homemade lemon curd

Homemade lemon curd

  • 1 lemon, juice and rind
  • 1 egg, beaten
  • 125 g sugar
  • 25 g butter


1. In a large bowl set above a pan of gently simmering water, mix all the ingredients together. Stir constantly using a wooden spoon until the mixture begins to thicken and the curd coats the back of the spoon. Do not let the water underneath boil, or let the mixture overheat as the eggs will scramble.

2. Pour into a sterilised jar. The curd will keep in the fridge for up to a week
