Honey Marinated Radicchio

The naturally bitter taste of radicchio is mellowed here with a sweet blend of honey, lemon and olive oil before grilling

Honey Marinated Radicchio

  • 1 radicchio
  • 1 tbsp olive oil
  • 1 tbsp clear honey
  • juice of half a lemons
  • black pepper


1. Depending on its size, cut the radicchio into halves or wedges, ensuring that each piece has a bit of core to keep the leaves together. In a large bowl combine the olive oil, honey, lemon juice and whisk to combine. Season to taste with salt and pepper.

2. Add the radicchio to the bowl and turn gently to coat thoroughly with the marinade. Spoon or brush some of the marinade over the cut surfaces and encourage it to trickle down between the layers of leaves. Set aside for at least 20 minutes.

3. Heat an overhead grill. Arrange the radicchio on a grill pan and grill on each side for 2-3 minutes until lightly charred. Serve with grilled steaks, fish or chicken.
