Honeyed figs with pistachios

Honeyed figs with pistachios

  • 8 figs
  • 4 tbsp Manuka honey
  • 50 g unsalted butter
  • 2 tbsp water
  • 2 sprig of rosemary
  • 100 g pistachio nuts
  • icing sugar
  • 170 g Greek yogurt


1. Preheat the oven to 180C/160C/gas 4.

2. Make a cross cut at the tip of each fig down to about three-quarters of the fruit. Place into an ovenproof dish. Pinch the fruit open and dot the flesh with some butter and drizzle with some honey. Scatter over the rosemary sprigs and drizzle the water over the figs to moisten.

3. Roast the figs for 10-12 minutes, or until they are softened but still retain their shape. Remove from the oven and heat on the hob for a minute or two, basting the figs in the cooking juices.

4. Toast the pistachios in a hot dry pan for about a minute, or until golden-brown and fragrant. Dust with some icing sugar while the nuts are still warm.

5. To serve, divide the figs among serving bowls and spoon over the cooking juices and some yogurt. Scatter the sugared pistachios nuts over.
