Hot and sour Asian leaf salad

Hot and sour Asian leaf salad

Ingredients

  • 1 handfuls Chinese cabbage
  • 1 handfuls baby spinach
  • 1 small bunches coriander, chopped
  • 1 small bunches mint, roughly torn
  • 1 small bunches Thai basil, roughly torn
  • 1/2 cucumber, peeled and sliced
  • 1 red chilli, finely sliced
  • 1 handfuls bean sprouts
  • 1 handfuls roasted peanuts, chopped

For the dressing

  • 1 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 2 limes, juice only
  • 1 orange, juice only
  • 1 tsp caster sugar

Method

1. Combine all the ingredients for the dressing in a small bowl.

2. Place all the salad ingredients in a large bowl, pour over the dressing, toss and scatter with the roasted peanuts to serve.
