Hot black-eyed and basil bean dressing

Ingredients

  • 4 tbsp olive oil
  • 1 clove garlic, crushed
  • 400 g black-eyed beans, canned, drained and rinsed
  • 1 lemon juice
  • 1 small bunch basil
  • 1 pinches black pepper

Method

1. Heat the olive oil in a saucepan. Add in the garlic and the beans and fry, stirring now and then, for 2 minutes. 2. Add in the lemon juice, basil and season with salt and freshly ground pepper. 3. Toss the bean mixture through freshly cooked pasta and serve straight away.
