James Martin shows how to make a painter's palette and paint brush for a unique way of serving ice cream

  • 25 g butter, softened
  • 50 g caster sugar
  • 50 g plain flour
  • 1 1/2 egg whites

For the paint brush:

  • 1 tbsp caramelised sugar


1. Mix sugar and butter to paste, add flour and egg whites, mix together and leave to firm in fridge.

2. Preheat the oven to 200C/180C/gas 6.

3. Make a template from a sheet of plastic in the shape of a painter's palette. Place onto a non-stick mat and spread the mixture over the top of the template, remove template and bake in the oven for about 3-4 minutes until golden brown. Leave to cool.

4. Mould the caramelised sugar into the shape of a paint brush.

5. Serve painter's palette on plate with 3 different sorts of ice cream and place paint brush on top. Serve.
