Indian chickpea salad

A nutritious and crunchy salad which keeps those hunger pangs at bay

Indian chickpea salad

Ingredients

  • 1 x 400 g can chickpeas, drained
  • 1 small red onion, chopped
  • 1 handfuls coriander, chopped
  • 1 red chilli, chopped
  • 100 g bombay mix, from a packet
  • 1 lemon, juice only
  • 1 tbsp yogurt

Method

1. Combine the drained chickpeas with the onion, coriander and red chilli.

2. Just before serving, stir in the Bombay mix and squeeze over the lemon juice. Finish with a dollop of yogurt. Tuck in straight away.
