Jerk Pork

Traditional jerk marinade adds great flavour to tender pork in this spicy barbecue recipe from Anthony Stewart

Ingredients

  • 1 tsp ground allspice
  • 1 clove garlic, crushed
  • 3 scotch bonnet peppers
  • 1 cm ginger, chopped
  • 2 tsp soy sauce
  • 1 tsp thyme, leaves only
  • 1 small onion, chopped
  • 2 spring onions, chopped
  • 4 x 200 g pork fillet

Method

1. Place all the ingredients for the marinade in a food processor and whiz to a paste.

2. Rub the paste thoroughly and evenly over the pork and leave to marinate for 2 hours.

3. Barbecue, or grill the meat for about 20 minutes or so, until cooked through. Slice and serve with salad.
