Lamb cutlets in coffee sauce

Just a little coffee and carefully chosen aromatic spices gives a wonderful depth of flavour to this unusual dish from Ashbell McElveen

Lamb cutlets in coffee sauce

  • 25 g butter
  • 75 ml strong coffee
  • 115 ml clear honey
  • 2 tbsp Worcestershire sauce
  • 0.25 tsp ground mace
  • 0.5 tsp ground cardamom
  • 0.5 tsp ground cinnamon
  • 1 tsp lemons, juice
  • 30 g ghee
  • 6 lamb cutlets
  • 6 prunes, pitted
  • 1 tbsp fresh mint, chopped to garnish
  • 350 g long grain rice, to serve


1. In a small pan melt the butter over a low heat, mix in the coffee, honey, Worcestershire sauce, spices and lemon juice. Cover and remove from the heat.2. Melt the ghee in a large frying pan, fry the cutlets until they are browned on both sides. Return the sauce to the heat, add the prunes bring to the boil and pour over the cutlets.3. Garnish the cutlets with the mint and serve with boiled rice.
