Coriander seed and leaf add a distinctive flavour to Kenyan kebabs in this simple recipe

Ingredients

  • 200 g minced lamb
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tbsp coriander leaves, chopped
  • juice of 1 limes
  • 1 red chilli, chopped
  • 1 tbsp gram flour
  • salt, and freshly ground pepper

Method

1. In a mixing bowl, mix together the lamb, cumin, ground coriander, chopped coriander, lime juice, chilli and gram flour.2. Mix together well and season with salt and freshly ground pepper.3. Divide the lamb mixture into 4 even portions and wrap each portion around a skewer, pressing the meat onto the skewer.4. Preheat the grill then grill the lamb skewers until cooked through and browned on both sides.5. Serve at once.
