Paul Hollywood's crunch crisp sesame coated wafer bread makes great eating anytime

Ingredients

  • 250 g strong bread flour, plus extra for dusting
  • 100 g semolina
  • 1½ tsp salt
  • 1 tbsp olive oil
  • 100 ml water
  • 50 ml milk
  • 1 egg, beaten
  • 100 g sesame seeds

Method

1. Put all the ingredients except the egg wash and sesame seeds into a bowl. Mix well. Knead for 5 minutes until the dough is pliable.

2. Set the oven to 220°C/gas 7. Lightly grease a baking sheet. Tip the dough out onto a lightly floured surface. Using a rolling pin, roll out until it is wafer thin. Use lots of flour but brush it off afterwards.

3. Cut the dough into random shapes. Put on three baking trays, brush each one with beaten egg and coat the top with sesame seeds. Bake for 10-20 minutes until dark brown. Serve immediately.
