Leek, onion and couscous salad

Leek, onion and feta cheese combine with couscous to make great grains in this deliciously easy recipe from Janet Brinkworth

Leek, onion and couscous salad

  • 200 g couscous
  • juice of 2 lemons
  • 50 ml olive oil
  • 100-125ml boiling water
  • 1 leek, thickly sliced
  • 1 red onion, sliced
  • 2 good handfuls of parsley, chopped
  • a handful of mint, chopped
  • salt, and freshly ground black pepper
  • 100 g feta cheese


1. Put the couscous into a large bowl and add the lemon juice and olive oil.2. Pour in the boiling water, stir, then cover with cling film, and leave for about 10 minutes.3. Cook the leek in plenty of boiling salted water until soft. Drain and stir into the couscous with the onion, parsley and mint.4. Season to taste with salt and freshly ground black pepper and stir in the feta.5. Serve immediately.
