Lemon cream with ginger biscuits and chocolate

Lemon cream with ginger biscuits and chocolate

Ingredients

  • 25 g icing sugar
  • 450 ml double cream
  • 1 lemon, zest and juice
  • 5 gingernut biscuits
  • dark chocolate, enough to grate on top

Method

1. Sift icing sugar into the cream, semi-whip and then add the juice and zest of the lemon, which will naturally thicken the cream.

2. Crumble the ginger biscuits into the cream and fold in.

3. Spoon into martini glasses and grate some chocolate on top.
