Lemon Curd

Tasty on toast, this lovely lemon curd from Stefan Gates makes a great cake filling and a versatile ingredient for all manner of delights

  • 100 g unsalted butter
  • 175 g caster sugar
  • 3 lemons, zest and juice
  • 2 eggs
  • 1 egg yolk


1. Place the butter in a saucepan with the sugar.

2. Add the lemon zest and juice. Stir over a low heat, until the butter has melted.

3. Add the eggs and continue to cook gently for about 10 minutes, until the mixture is thick enough to coat the back of a wooden spoon. Take care not to overheat the mixture, or the eggs will scramble.

4. Remove the mixture from the heat and pour through a sieve into a sterilised jar.

5. Refrigerate until required.
