Lemon Mascarpone Cream

Ingredients

  • 80 g mascarpone
  • 60 g crème fraîche
  • 30 g caster sugar
  • 1 lemon, zest and juice
  • 3 tbsp lemon curd
  • 1 handfuls lightly crushed meringues
  • 4 small brandy snap baskets, to serve (optional)

Method

1. Combine the mascarpone cheese, crème fraîche and caster sugar. Stir in the lemon juice and zest, followed by the crushed meringues. Streak in the lemon curd.

2. Spoon the mixture into brandy snap baskets, or shape into quenelles.
