Lemon squares

Luscious and lemony, these delightful squares from Amy Willcock make a tempting treat with a cuppa - and a delicious dessert too

  • 250 g soft unsalted butter
  • 125 g caster sugar
  • 500 g plain flour, sieved
  • pinch of salt
  • icing sugar, to dust

For the filling:

  • 6 extra large organic eggs
  • 750 g caster sugar
  • zest of 6 lemons
  • 250 ml lemon juice
  • 250 g plain flour


1. To make the base, cream the butter and sugar together until pale and fluffy. Stir in the flour and salt and mix until the mixture forms a dough.

2. Use the pastry to line a shallow baking tray, about 20x30cm, cover with cling film and chill for 30 minutes or so. Set the oven to 180°C/gas 4. Bake the crust for 15 to 20 minutes until golden. Remove from the oven abd cool on wire rack.

3. Whisk all the filling ingredients together until smooth and then pour into the base. Bake for 30-35 minutes until the filling is set. Leave to cool in the tin and then slice and dust with icing sugar to serve.
