Method

1. Cut the skin and pith away from the grapefruit and separate the segments. Roughly dice the tomato and avocado and halve and finely slice the onion.

2. Pour off any excess juice from the grapefruit and put the segments in a serving bowl with the tomatoes, avocado and red onion. Season well with salt and freshly ground black pepper and cover with the lobster meat. Squeeze over enough lime juice to sharpen, drizzle generously with olive oil, and gently toss everything together before serving.
