Mangoes and Bananas in Lime Syrup

Ingredients

  • 110 g sugar
  • 125 ml water
  • 1 ripe mango
  • 2 bananas
  • 2 limes, grated zest and juice

Method

Place the sugar and water in a saucepan and stir over a medium heat to dissolve the sugar. Bring up to the boil and simmer for 2 minutes before leaving to cool. Peel the mango and thinly slice. Slice the banana too and place the fruit into a bowl. Pour over the cool syrup and add the grated zest and juice of the lime. Chill this fruit dish before serving.
