- 1 large ball buffalo mozzarella
- 1 red chillies, seeds removed, finely chopped
- 2 tbsp olive oil, plus extra for drizzling
- 12 leaves basil
1. Rip the mozzarella into bite sized pieces and place in a bowl. Add the chilli and olive oil and toss all the ingredients together.
2. Place a basil leaf in the bottom of each of 12 Chinese spoons and top them with a little mozzarella. Drizzle with olive oil and serve.
