Ingredients

  • 400 ml coconut milk
  • 3cm piece palm sugar
  • ½ cantaloupe melons
  • pinches salt
  • 1 tsp caster sugar
  • crushed ice, to serve

Method

1. Pour the coconut milk into a saucepan; add the palm sugar and heat gently until the palm sugar had dissolved and the milk is golden. Stir well and leave to cool.

2. Chop the melon flesh into bite size pieces and place them into a serving bowl. Spoon the sweetened milk over the melon, top with crushed ice and serve immediately!
