  • 2 red peppers
  • 4 Merguez sausages
  • 1 baguette
  • 2 tbsp olive oil
  • large handful of rocket

For the rouille:

  • 150 ml mayonnaise
  • juice of ½ lemons
  • pinch of chilli powder
  • 2 clove garlic, finely chopped
  • 1 tbsp tomato ketchup

Tips and Suggestions

Merguez sausage takes its name from the French transliteration of the Arabic word 'mirqaz', and is a spicy small sausage, made of lamb and chilli - popular in Tunisia and Algeria. It is served alone as a meze or sometimes with couscous or other foods such as the braised dishes known as tagines.


1. Beat all the ingredients for the rouille together in a large bowl.

2. Grill the red peppers under a hot grill until charred and blistered. Remove from the heat and place into a plastic bag until cool. Remove the skin and seeds and cut into strips.

3. Grill the sausages until cooked through.

4. Split the baguette in half horizontally, drizzle with olive oil and grill until lightly golden.

5. Layer all the ingredients in the baguette, cut in half and serve immediately.
