Minestrone soup

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 carrot, finely chopped
  • 1 stick of celery, finely chopped
  • 1 courgette, finely chopped
  • 800 ml hot vegetable stock
  • 400 g canned chopped tomatoes
  • 400 g can of chickpeas, rinsed and drained
  • 1 tsp dried oregano


1. Put a large saucepan over a medium-high heat, pour in the oil and then stir in the onion and garlic. Cover and allow to cook for 2 minutes. Stir in the carrot, celery and courgette. Cover and leave to cook for a further 5 minutes.

2. Pour in the stock, tomatoes and chickpeas. Bring to the boil, reduce the heat and simmer. Stir in the oregano, season with salt and pepper and continue to simmer for about 10 minutes before serving.
