  • 1 kg new potatoes
  • 3 tbsp olive oil
  • 1/2 lemon, juice only
  • 4 spring onions, finely sliced
  • chives, finely snipped
  • salt and black pepper

1. Boil the new potatoes in a large pan of boiling salted water for 20-25 minutes or until tender. Drain.

2. Drizzle the olive oil and lemon juice over the hot potatoes and sprinkle over the spring onions and chives.

3. Toss everything together, season with salt and black pepper and transfer to a large serving bowl. Serve hot or warm.
