  • 250 g unsalted butter, softened
  • 1 nutmeg, freshly grated

Tips and Suggestions

This is a versatile flavoured butter to stir into savoury dishes such as mash, cooked spinach, carrots, use to make b├ęchamel sauces or to fry or top fish and meats. It can also be used to make sweet pastry; to top grilled or pan-fried fruits.


1. Beat the butter with a wooden spoon until it is nicely softened and smooth, and then stir in the freshly grated nutmeg. If you fancy a stronger nutmeg flavour, add more.

2. Spoon onto a piece of cling film and twist together the sides to form a sausage shape. This can now be stored in the fridge or freezer. To serve, simply cut into slices and use as desired.
