Old fashioned sweet carrot kugel

Ingredients

  • 3 tbsp potato flour
  • 8 tbsp red wine
  • 450 g carrots, grated
  • 100 g brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • juice and zest of 1 lemons
  • 1 egg, beaten
  • 50 g raisins
  • 50 g dates, chopped
  • pinch of salt
  • 100 g butter, melted
  • soured cream, to serve

Method

1. Set the oven to 180°C/gas 4. Dissolve the potato flour in the wine, then mix with the remaining ingredients and combine well.

2. Spoon the mixture into a greased, shallow 20 x 25cm roasting pan and bake for 1 hour until crusty and amber in colour.

3. Serve hot with a dollop of sour cream.
