Onion sauce

  • 6 tbsp vegetable oil
  • 2 bay leaves
  • 4 cloves
  • 2.5 cm cinnamon sticks
  • 1 black cardamom
  • 1 kg onions, sliced
  • 150 ml water


1. Heat the vegetable oil in a heavy-based saucepan. Add in the bay leaves, cloves, cinnamon and black cardamom, then the onion.2. Fry gently until the onions are translucent.3. Add in the water and bring to the boil. Simmer very gently for 30 minutes, until the onions are cooked to a pulp. Set aside to cool.4. Discard the bay leaf, cloves, cinnamon and cardamom pod. Using a food processor or hand blender, process the onion sauce into a puree.5. Store in the refrigerator for up to one week or in the freezer for up to 1 month as use as required.
