Oozy ricotta and prune muffins

Oozy ricotta and prune muffins

  • 225 g caster sugar
  • 4 eggs
  • 500 g ricotta cheese
  • 1 cans prunes, canned
  • 0.25 tsp vanilla extract
  • 50 ml water
  • 1 tbsp brandy


1. Preheat the oven to 180C/gas 4

2. Beat 125g of caster sugar and eggs in a bowl until well-blended. Add the ricotta and beat well. Drain the prunes over a bowl, reserving the juice. If they're large, chop roughly the fruit.

3. Grease 6-8 muffin tins and spoon in half of the ricotta mixture. Scatter over the prunes and top with remaining mixture. Bake in the oven for about 15 minutes, until they're firm to the touch and golden in colour.4. Heat together the remaining sugar, vanilla extract and water until the mixture comes to a boil. Cook briskly until the syrup thickens into a light caramel.5. Add the prune juice and reduce to a thickish syrup before pouring in the brandy.

6. Top each ricotta muffin with a spoonful of sauce, and serve with a strong black espresso.
