Orange and Ginger Chicken

Ingredients

For the chicken

  • 0.25 tsp chilli powder
  • 0.25 tsp ground cumin
  • 0.25 tsp dried thyme
  • 0.25 tsp cayenne pepper
  • 4 x 100 g chicken breasts

For the sauce

  • 60 ml apple juice, or cider
  • 2 small cloves garlic, sliced
  • 1 tbsp lemon zest, grated
  • 1 tbsp oranges, zest
  • 1 cm ginger, grated
  • 2 tsp cornflour
  • 125 ml water

Method

1. Mix the chilli powder, cumin, thyme and cayenne together and rub into the chicken breasts.

2. Heat the oil in a hot frying pan and cook the breasts for 4-5 minutes on each side, until golden.

3. Add the apple juice to the frying pan and stir in the garlic, citrus zests and ginger. Simmer for 3-4 minutes.

4. Mix the cornflour and water together and add to the pan. Cook, stirring constantly for 2-3 minutes, until the mixture has thickened. Serve hot with brown rice.
