Pan-Fried Line-Caught Wild Pike with Sautéed Horn of Plenty Mushrooms

Ingredients

  • 25 g butter
  • 100 g horn plenty mushrooms
  • 1 clove garlic
  • large handful wild spinach
  • 2-3 sprigs chopped parsley

Method

1. Heat the butter in a frying pan and fry the fish fillets on both sides until golden brown. Remove and keep warm.

2. Add the mushrooms and garlic to the pan and fry gently until soft. Add the spinach and cook for 1-2 minutes until wilted.

3. To serve: place the fish fillets on warm serving plates and place the contents of the pan around. Sprinkle with parsley and a squeeze of lemon juice and serve immediately.
