Pan-grilled plaice with rocket salsa

Pan-grilled plaice with rocket salsa

For the fish

  • 1 tbsp olive oil
  • 4 medium plaice fillets

For the roasted cherry tomatoes

  • 300 g cherry tomatoes
  • 2 tbsp olive oil
  • 1 pinches black pepper

For the rocket salsa

  • 1 large rocket, bunch, finely chopped
  • 1 lemons, juice
  • 2 tbsp extra virgin olive oil


1. Set the oven to 200°C/gas 6. Cut the tomatoes in half, drizzle with olive oil and season with salt and freshly ground black pepper. Roast for 15 minutes. 2. Put the rocket into a bowl and stir in the lemon juice and olive oil. Season to taste with salt and freshly ground black pepper. 3. Brush a griddle pan with a little olive oil and place over a high heat. Season the plaice well and cook on both sides for 1-2 minutes. 4. Serve the griddled plaice on a warm plate with a drizzle of rocket salsa and the roasted cherry tomatoes arranged in a circle around the fish.
