Ingredients

  • 250 g cherry tomatoes
  • 4 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp chopped thyme
  • black pepper
  • 4 slices of chorizo sausages

Method

1. Preheat the oven to 200°C/gas 6.

2. Place the cherry tomatoes in a roasting tray. Toss with 2 tablespoons of balsamic vinegar, olive oil and thyme and season with salt and freshly ground pepper.

3. Roast for 5-10 minutes, until softened.

4. Heat a heavy-based, non-stick frying pan over medium heat until hot. Add the chorizo to the pan and sear for 1 minute on each side.

5. Divide the roast tomatoes and seared chorizo among four serving plates. Drizzle the remaining balsamic vinegar around each portion and serve.
