Nell Nelson shares her mother's recipe for perfect golden brown pancakes every time

  • 125 ml milk
  • 25 g butter
  • 2 tsp golden syrup
  • 1 egg, beaten
  • 250 g plain flour
  • 2 tsp baking powder
  • 2 tbsp caster sugar
  • 1/2 tsp salt


1. Heat the milk, butter and golden syrup until the butter has melted. Cool slightly and stir in the beaten egg.

2. Sift the flour, baking powder, sugar and salt into a mixing bowl. Make a well in the centre and pour in the milk mixture. Stir with a knife to mix, adding more milk if necessary so the mixture is the consistency of thick cream.

3. Heat a greased griddle pan until just smoking. Add a few tablespoons of the pancake batter to coat the bottom of the pan. Flip as soon as bubbles rise to the surface - they should be golden brown on the underside. Cook until the second side is golden. Repeat with the remaining mixture. Serve warm.
