  • 1 papaya
  • 3 tbsp coconut oil
  • 1 tsp mustard seeds
  • 4 dried chillies
  • 15 curry leaves
  • 1 shallot, finely chopped
  • 2 green chillies, chopped
  • 75 g grated coconut

Tips and Suggestions

Grated coconut and raw papaya can both be found in ethnic grocers


1. Peel and finely grate the papaya and set aside.

2. Heat the coconut oil in a large saucepan and toss in the mustard seeds, red chillies and curry leaves. After a few seconds add the shallot and green chillies.

3. Fry for about a minute before tipping in the papaya. Stir and cook for 3-4 minutes before adding the coconut. Warm the thoran through and serve straight away.
