Pappardelle con salsiccia (pappardelle with Italian sausage)

  • 5 tbsp Italian olive oil
  • 1 medium onion, finely sliced
  • 3 medium Italian sausages, chopped into chunks
  • 1 handfuls walnut halves, crushed
  • 1 medium red chilli, chopped
  • 200 g sun-dried tomatoes, in oil
  • 2 tbsp finely chopped flat leaf parsley
  • 350 g pappardelle, dry egg
  • 1 pinches salt
  • 100 g parmesan shavings


1. Heat the olive oil in a frying pan. Add the onion and gently fry the onion until soft. Add in the sausage chunks and fry until cooked through. 2. Add the walnuts, chilli, sun-dried tomato and parsley. Season with salt and cook for a further two minutes. 3. In the meantime, cook the pappardelle in a large pan of salted boiling water until al dente, drain and place into the sauce. Mix well and serve immediately with shaved Parmesan on top.
