For the dough

  • 250 g strong bread flour
  • 5 g salt
  • 50 g butter
  • 120 ml warm milk
  • 12 g fresh yeast
  • 1 egg, beaten

For the filling

  • 100 g finely sliced Parma ham
  • 180 g buffalo mozzarella, sliced


1. Place the flour, salt, butter, warm milk, yeast and egg in a mixing bowl and mix well together to form a dough.2. Transfer the dough to a lightly floured surface and knead it lightly for 6 minutes.3. Return the dough to the cleaned-out mixing bowl and set aside to rise in a warm place for 1 hour.4. Place the dough on a lightly floured surface and roll it out into a rectangle, around 25 x 33cm.5. Layer the Parma ham over the dough rectangle, then top with the mozzarella.6. Roll up the rectangle tightly until it resembles a Swiss roll. Roll it slightly, then cut lengthways along the dough and plait the two dough lengths together.7. Place the dough plait onto a lined baking sheet and set aside to rise for 1 hour.8. Preheat the oven to 200°C/gas 6.9. Bake the plait for 25 minutes until golden.
