Parma ham and nectarine salad

Parma ham and nectarine salad

Ingredients

  • 2 nectarines or peaches, (unpeeled), stone removed and flesh cut into 5mm thick slices
  • 4 slices Parma ham, torn into pieces
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 4 tbsp chopped mint

Method

1. Arrange all the ingredients on a plate or toss together in a bowl, carefully dividing between plates to serve.
