  • 115 g self-raising flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 55 g parmesan, grated
  • 55 g semolina
  • 1 pinches freshly ground black pepper
  • 3 eggs, separated
  • 85 g butter, melted and cooled
  • 175 ml milk


1. Preheat the oven to 190ºC/gas 5. 2. Sift the flour with the baking powder and salt into a bowl. Mix in the Parmesan cheese, semolina and pepper. Make a well in the centre, and pour in the butter, egg yolks and milk. 3. Mix well to form a loose batter. Whisk the egg whites stiffly, and fold into the mixture. Pour the mixture into a greased lined 18cm cake tin. 4. Bake in the oven for 30-35minutes, until firm and nicely browned. Cool for a few minutes, and turn out on to a cake rack.
