Passion fruit and lime meringues

Fragrant passion fruit and zesty lime add an exotic touch to meringues in Sophie Michell's delectable dessert

  • 4 egg whites
  • 1 pinches salt
  • 225 g caster sugar
  • 2 limes
  • 400 ml crème fraîche, low fat
  • 6 passion fruit
  • 1 handfuls physalis, to decorate


1. Preheat the oven to 150C/gas 2. Line two baking sheets with silicone paper. In a mixing bowl, whisk the egg whites with the salt until stiff, but not dry. 2. Add the sugar 2 tablespoons at a time, whisking in well between each addition, until stiff and glossy. Using a dessertspoon, spoon the mixture into 12 dollops, spaced evenly apart, on the baking sheets. 3. Bake the meringues in the oven for about 1½ hours until crisp and very pale golden brown. 4. While these are cooking, zest and juice the limes. Mix the lime zest and juice into the crème fraîche. Halve the passion fruit and scoop out and reserve the pulp. 5. To serve, place two meringues on each plate, spoon a dollop of the lime-flavoured creme fraiche on top, then some passion fruit pulp. Decorate with physalis and serve at once.
