Pea and Mascarpone Ice Cream

Pea and Mascarpone Ice Cream

Ingredients

  • 300 g frozen peas
  • 250 g mascarpone
  • 1 tsp caster sugar
  • 100 ml full-fat milk

Method

1. Bring a large pan of water to the boil and cook the peas until soft. Drain and transfer to a blender.

2. Add the mascarpone cheese, caster sugar and milk, and process until the mixture is smooth.

3. Transfer the mixture to an ice cream machine and churn until frozen - this should take about 20 minutes. Transfer to an airtight box and store in the freezer.
