Pea and Mint Purée

Pea and Mint Purée

Ingredients

Main

  • 450 g fresh or frozen peas
  • 0.5 tsp freshly ground salt and black pepper, or to taste
  • 25 g butter
  • 1 tbsp roughly chopped mint

Method

1. Cook the peas in boiling water with a pinch of salt, with the lid off, for three or four minutes, until they are just cooked.

2. Drain and tip into a food processor and whiz up with the butter, mint and season to taste. If you are making it ahead of time, make sure that you do not cover it while it is hot, so as to retain the fresh green colour. Reheat gently when ready to serve.
