Peanut butter kiss cookies

  • 250 g smooth peanut butter
  • 175 g brown sugar
  • 175 g granulated sugar, plus extra for rolling
  • 3 tbsp milk
  • 1 1/2 tsp vanilla extract
  • 1 1/2 tsp bicarbonate of soda
  • 3/4 tsp salt
  • 36 Hershey's kisses


1. Preheat the oven to 140C/gas 1. Cream together the peanut butter, brown sugar and granulated sugar in a bowl by beating with a wooden spoon. Add the milk and vanilla and beat well.

2. Sift together the bicarbonate of soda and salt and stir into the mixture. Shape 1 tablespoon into a ball, then roll in white sugar and place on an ungreased baking tray. Continue shaping and rolling the rest of the mixture. Bake in the oven for 8 minutes.

3. Remove the cookies from the oven, then unwrap the Hershey's Kisses. Place a Kiss on top of each cookie, return to the oven and bake for another 2-3 minutes. Remove and place on a wire rack to cool.
