  • 15 g butter
  • 90 ml honey
  • 2 eggs
  • 65 ml vegetable oil
  • 65 ml double cream
  • 1 tsp baking powder
  • 90 g rolled oats
  • 200 g plain flour
  • 3 pears


1. Preheat the oven to 180ÂșC/gas 4. Line a muffin tin with paper cases. 2. Place the butter and honey in a small saucepan and heat gently until melted. Remove from the heat and cool slightly. 3. Place the eggs, vegetable oil and cream in a mixing bowl and whisk to combine. Mix in the butter and honey mixture. 4. Fold in the baking powder, oats and flour. 5. Grate the pears straight into the mixture, folding in gently until combined. Spoon the mixture into the muffin cases. 6. Bake for 25-30 minutes until golden and cooked through and serve warm or at room temperature.
