Pear & stilton croûte

Crusty bread is piled high with warm pears, bubbling Stilton and fresh rocket in this light snack

Pear & stilton croûte

Ingredients

  • 1 loaf crusty bread
  • 4 tbsp extra virgin olive oil
  • 1 pinches black pepper
  • 2 pears
  • 150 g stilton cheese, sliced
  • 100 g wild rocket

Method

1. Preheat the grill. Cut the bread into 2cm slices.2. Drizzle over half the olive oil and season generously.3. Turn the bread and repeat with the remaining oil.4. Place under the grill until golden, then turn and toast the other side.5. Cut the pears into 5mm thick slices and place on the toast.6. Lay the sliced Stilton over the top. Return to the grill until melted and just beginning to bubble. Top with rocket and serve immediately.
