Pearl Spot Marinated in Coriander

  • 1 pearl spot (300g), whole
  • juice of 1 limes
  • 1/2 tsp salt

For the herb coating:

  • 2 heaped tbsp coriander leaves
  • 2 heaped tbsp mint leaves
  • 2 fat cloves garlic
  • 3cm piece of ginger, chopped
  • 2 green chillies, chopped
  • 12 curry leaves
  • 3 tbsp coconut oil

Tips and Suggestions

Lemon sole makes a good substitute for pearl spot


1. Clean the fish and slash with a sharp knife to make two gashes on each side. Rub the lime juice and salt all over the fish and set aside for ten minutes.

2. Using a pestle and mortar or a food processor, pound the coriander leaves, mint, garlic, ginger, chillies and curry leaves into a smooth paste.

3. Rub this herby paste over both sides of the fish, pushing it down into the gashes. Heat the coconut oil in a frying pan and fry the fish for 5 minutes on both sides, adding a dash of water to the pan if it looks like catching.
